A griddle solves the foods a grate cannot hold: eggs, pancakes, smash burgers, diced onions and peppers for fajitas, delicate fish, stir-fry. Full-contact cooking also browns differently — edge-to-edge Maillard rather than bar marks with raw gaps between them.

At 14 by 17.5 inches it covers roughly one burner zone, which is the useful configuration: flat-top on one side, open grate on the other, both running at once. Breakfast on one half and bacon-searing on the other, from the same grill, at the same time.
