The Alturi Stainless Steel Smoker Tray (SSMK-ALT) is the cheapest way to get real wood smoke out of a gas grill. It holds wood chips or pellets below the grate, where burner heat smolders them into clean smoke instead of letting them flame off.

The reason a tray works and a foil pouch does not is contact and containment. Stainless conducts burner heat straight into the chips and the walls keep oxygen low enough that the wood smokes rather than burns, so you get twenty or thirty minutes of steady smoke instead of two minutes of fire and then nothing.

Hickory and oak for beef, apple and cherry for pork and poultry, mesquite if you want it loud. Pellets last longer per fill than chips and do not need soaking, which makes them the easier choice for a long cook.
