Power Burner Buying Guide: Seafood Boils, Woks & Budget Picks

Choose a power burner by cookware support, heat control, fuel supply and installation fit—not maximum BTU alone. For large seafood boils or wok cooking, a dedicated power burner concentrates its output under one cooking station. For small everyday sides, a conventional side burner may be the better use of your budget.

For Lowcountry boils: start with the pot

A seafood boil puts a different demand on a burner than a saucepan of butter. You are heating a larger water volume and adding ingredients that cool it down. Higher available output can help, but pot diameter, water volume, wind exposure and gas delivery all influence the result. A BTU number cannot promise a particular boil time.

Check that the manufacturer approves your pot size and that the base sits securely on the grate. Do not infer a pot capacity from appliance width. Alfresco explicitly describes the Versa Power grate as accommodating stockpots up to 100 quarts; that is a model-specific claim, not a capacity shared by every burner in this table.

For wok cooking: check the support and the accessories

A round-bottom wok needs a suitable support, not simply a flat grate. RCS lists removable wok rings on the two models above, and TrueFlame lists a removable wok grate. Alfresco offers a compatible commercial wok accessory. Confirm the wok diameter, supported shape and whether the wok itself is included; a wok ring does not mean a wok is supplied.

For simmering as well as boiling: compare the low end

Maximum output describes only one end of the cooking range. Alfresco publishes a 400–20,000 BTU range for the center burner and 5,000–45,000 BTU for the outer burner. That makes it worth considering if delicate sauces and high-output cooking must share one station. For other models, ask about usable low heat and independent controls rather than assuming that every 60,000 BTU unit behaves the same way.

Four installation questions before you order

  1. Will the exact model fit? Confirm cutout width, depth and height from its current installation drawing. A liner, if required, changes the planned opening.
  2. Can the gas supply serve the added load? Have your installer assess the combined appliance demand and the required supply pressure.
  3. Is the enclosure approved? Check combustible construction, any required model-specific insulating liner, clearances and ventilation against the manufacturer's manual.
  4. Is the working position practical? Consider loaded-pot height, lifting access, nearby prep space and lighting power requirements.

Power burner FAQs

Do I need 60,000 BTUs for a seafood boil?

There is no universal requirement. Water volume, cookware, exposure and gas supply matter. The 60,000 BTU models above are high-output candidates; verify pot support and installation suitability before choosing one.

Can a power burner simmer?

Some can. Look for documented low-output settings and independent controls. Alfresco publishes a low simmer range; do not assume the same minimum output for other brands.

Is a double side burner the same as a dual-ring power burner?

No. A double side burner generally gives you two separate cooking positions. A dual-ring power burner concentrates two rings beneath one station.

Can I add a power burner to an existing outdoor kitchen?

Possibly, after checking the opening, enclosure, clearances and gas supply. It is not automatically a drop-in replacement for a standard side burner.
