How much heat do the two burners put out?

15,000 BTUs each, 30,000 BTUs total. Both are brass Versa Burners.

That output is aimed at high-heat work — wok cooking, stir-fry and hard searing — not just holding a pot at a simmer.

What cutout does the slide-in double burner need?

12" wide, 20 1/4" deep and 9" high.

The unit itself is 13" wide, 23 1/2" deep and 12 1/2" high, so it overhangs the opening on all sides once it is slid in.

Why does the cover come completely off?

Because a hinged lid limits pan size. The stainless cover is fully detachable and gives you 180 degrees of access, so a wide pan or wok is not fighting a lid at the back.
