Will this control kit fit my Primo Round?

Yes, this is the Round version. Primo lists these kits by grill, so the Round, Junior, Large and X-Large each have their own and you order by the name of the grill you own. Buying the wrong size means buying a kit made for a different grill, so read the size in the title before you check out.

What is the difference between this and a grill thermometer?

A thermometer tells you the temperature. A control kit works to hold it. If you have ever watched a dome gauge climb past your target and gone out to close the vent a little, that manual correction is the thing this replaces, and it replaces it for as long as the cook runs rather than for as long as you are awake.

What does it change about a low and slow cook?

It takes the drift out of it. Charcoal burns down, weather shifts, and a fire that was sitting nicely two hours ago will not necessarily be sitting nicely at dawn. Can I use the Round kit on an Oval Junior?
