This is the cast iron searing grate for the Primo Oval XX-Large. It goes over the fire when you want hard sear marks, and it does that by putting real cast iron mass between the coals and the food rather than a thin grid.

On the largest grill in the range you are usually searing several things at once, and that is exactly the situation where a light grate falls down. Each cold piece of meat pulls heat out of the bars it lands on, and a thin grate cannot replace it fast enough, so the pieces that went on last never colour like the first ones did. Cast iron carries a much larger reserve of stored heat, so it keeps working through a full load instead of fading part-way through.

Made for the Primo Oval XX-Large ceramic charcoal grill and the Oval XX-Large All-In-One package. The cast iron griddle for the Oval XX-Large handles flat-surface cooking, and the cast iron firebox divider for the Oval XX-Large helps you split the fire underneath. Everything else for the XX-Large sits in Primo grill accessories.

Frequently Asked Questions

Is this searing grate only for the Oval XX-Large?

Yes, it is cut for the XX-Large firebox. Primo lists the same grate for the smaller Oval sizes, and they are not interchangeable, so read the size in the title rather than assuming a cast iron grate is a cast iron grate. Buy the one named for your grill.

Does a searing grate help when I am cooking a lot at once?

That is where it helps most. Every cold piece of meat pulls heat out of whatever it lands on, and a light grate runs out of heat before the batch is done. Cast iron holds a much larger reserve, so the pieces that go on last still meet a surface hot enough to mark them.

How does it compare to the standard grate that came with the grill?

The standard grate is built to spread food out and let heat through. This one is built to store heat and push it into the food at the contact points. For everyday grilling the standard grate is fine; for searing, the heavier cast iron is what makes the difference visible.

Can I use the firebox divider with it?

Yes, and they work well together. The firebox divider splits the fire so you can run a hot section and an unlit section on a grill this large, which lets you sear over the coals and then move food across to the quieter side to finish.

How do I stop it rusting?

Keep water and residue off it. Brush the bars while the grill is still hot, let it cool, then wipe a thin layer of oil over the iron. Store it dry rather than leaving it sitting in the grill, where ash holds damp against the metal between cooks.
