The Primo Round Fredstone Baking Stone is the 19-inch stone in Primo's Fredstone line, listed for the Primo Round. It is the larger of the two round Fredstone diameters.

On a ceramic charcoal grill, the stone is what makes real baking possible. Charcoal heat arrives lively and uneven; a heavy masonry disc takes its time charging up and then gives that heat back slowly, so the underside of whatever you are cooking meets one settled surface instead of a fire that surges every time the lid moves. Put the stone in while the grill is still climbing and let it charge with everything else. You are waiting on the mass of the stone, not on the air around it.

Diameter is worth thinking about rather than maximising. A kamado browns the top of a pizza with heat travelling up and around the dome, and a stone that fills the whole opening leaves that circulation nowhere to go. A gap around the edge keeps air moving past and the top of the pie cooking.

Made for the Primo Round ceramic charcoal grill. The 16-inch Round Fredstone is the smaller alternative, and the Primo pizza oven for the Round is the natural companion if pizza is the main reason you are buying a stone. For indirect setups generally, see the Primo heat deflector rack for the Round.

Frequently Asked Questions

Which Primo grill is the 19-inch Round Fredstone for?

The Primo Round. Round stones follow a round firebox; the Oval models take the oval Fredstones instead, which are shaped to the longer bed those grills have. If your grill's name contains the word Oval, this is not the stone for it.

What is the difference between the 19-inch and the 16-inch Round Fredstone?

Diameter, which is what the two titles state. A larger stone gives you more baking surface; a smaller one leaves more open space around the edge for air to travel past. Measure the area you will be setting it on, then pick the one that fits with room to spare rather than the one that fills it.

How do I know when the stone is ready to bake on?

Bring it up with the grill rather than adding it at the last minute. Masonry heats from the outside in, so a stone that has only been over the fire briefly is hot on top and cold through the middle, and the first pizza will pull the surface temperature straight back down. Give it a long, unhurried warm-up.

How should I clean and look after it?

Scrape it while it is still warm and let the next fire burn off what is left. Skip soap, because a porous baking surface holds detergent and gives it back to your food. Dark patches are normal and permanent. Let it cool in the grill rather than moving it hot onto a cold surface.

Can I use this stone on a Primo Oval?

This one is listed for the Round. On an Oval, a round stone leaves the ends of the cooking bed unused, which is why Primo lists oval Fredstones such as the 18 by 16 inch stone for the Oval Large. Buy the shape that matches your firebox.
