How to Get a Perfect Sear: The Reverse Sear Method Explained

A deep, browned crust is what separates a good steak from a great one. That crust comes from the Maillard reaction — browning that happens when the surface of the meat meets high heat. The reverse sear is one of the most reliable ways to get it at home.

  • Rest it briefly while you bring the grill to its highest heat.

Why the reverse sear works

A traditional sear-first method browns the outside quickly but often leaves a gray band of overcooked meat under the crust. The reverse sear flips the order: gentle heat brings the inside up evenly first, then a short blast of high heat builds the crust without overcooking the middle.

Step by step

1. Season early. Salt the meat and let it sit uncovered so the surface dries, which helps it brown.

2. Cook low and slow. Set up a two-zone fire and cook over indirect heat at around 250°F until the internal temperature is about 10 to 15°F below your target doneness.

3. Rest briefly. Move the meat aside while you turn the grill up to its highest setting.

4. Sear hot and fast. Sear over direct high heat for 1 to 2 minutes per side until a deep crust forms.

Tips for the best sear

Pat the surface dry before searing — moisture slows browning. Use a high-smoke-point oil, get the grates as hot as they will go, and leave the meat alone until it releases from the grate. An infrared sear burner, where your grill has one, gets the surface hot faster.
