The Primo Natural Finish Ceramic Baking Stone is the 16-inch round stone in the unglazed finish, listed for the Oval X-Large, Oval Large and Round. It is the larger of the two natural-finish diameters Primo lists.
Think of a stone as thermal savings rather than a cooking surface. It spends the warm-up period taking heat in, and then spends the cook giving it back at a rate that does not change when you open the lid, add a log of charcoal or lose a burst of heat off the top vent. Dough put on a properly loaded stone starts cooking immediately and keeps cooking evenly, which is the difference between a base that crisps and a base that dries out slowly while it waits for the grill to catch up.
Fits the Primo Oval Large ceramic charcoal grill and two other sizes. The glazed 16-inch stone is the same diameter with the other finish, and the 13-inch natural stone is the smaller version that also covers the Junior. For indirect setups, see Primo heat deflector plates for the Oval X-Large.
Frequently Asked Questions
The Oval X-Large, the Oval Large and the Round. That is three grills covered by one stone. The Oval Junior does not appear on this listing, and Junior owners should look at the 13-inch stones, which name it directly.
Neither, as far as anything Primo states. The titles tell you one stone is glazed and the other is left in its natural finish, and no performance difference is published, so we are not claiming one. They come in matching diameters and fit the same grills; this one is the cheaper of the two.
Treat it as a baking surface, not as a barrier. Primo lists heat deflector plates and deflector racks as separate parts, and those are what turn a direct fire into indirect heat. Use the deflector to take the flame out of the equation, and let the stone give you an even floor to bake on.
Sourdough and other free-form loaves, tray-free roasted vegetables, flatbreads, pastry and anything reheated that you want to stay crisp. A stone is also the calmest place on a charcoal grill for something you do not want catching, like a fruit tart or a sheet of cookies.
Ideally, you do not. Plan the cook so the stone stays where it is and comes down in temperature with the grill, because ceramic dislikes sudden changes and a hot stone set on a cold surface is asking for trouble. If it has to move, use dry heatproof gloves, since damp cloth conducts heat straight through.
