Is this one plate or a pair?

Do I need the heat deflector rack as well?

Can I use these for baking and pizza on the X-Large?
That is one of the better reasons to own them. Baking on charcoal falls apart if the fire radiates straight onto the underside of the food, so the deflector goes in first and the baking surface goes above it. Bread, pies and pizza all behave once the heat is indirect.
Will an Oval Large deflector plate work in an X-Large?
No. The Large plates are cut for the Large firebox and will not seat correctly in the X-Large, which leaves gaps for heat to shoot through and undoes the point of fitting them. Match the plate to the grill size every time.
