Le Griddle Commercial Series 75 Built-In Gas Griddle, 6mm Plate — OML75C6
The Commercial Series 75 with the 6mm plate is the combination built for volume: Le Griddle's heaviest cooking surface at this size, without the electronics that a working kitchen has no use for. The surface measures 29" x 16", roughly 464 square inches, fed by two U-shape 304 stainless burners at 18,000 BTU total.
The 6mm plate is the point. Double the thickness means double the stored heat, and stored heat is what keeps the surface temperature from collapsing when a full load of cold food lands on it. Anywhere the griddle runs all service rather than in bursts, this is the plate to have.
The Commercial Series drops the Pro Series lighting package — no backlit knobs, halogen lights or LED projection — and uses a straightforward push-button ignition instead. Everything that touches food is identical: same burners, same 304 stainless housing, same cast iron and aluminum base plate beneath the cooking surface, same thermocouple safety valves. Ignition is push-button, the finish is Texas Sea Glass matte bead-blasted, and the grease tray lifts out and goes in the dishwasher.
It drops into the same 28-3/4" by 16-3/4" by 5-3/4" cut-out as every other 75 Series unit, runs natural gas or propane with orifices supplied, and takes a 3/8" male flare inlet. Finish the face with a GFFRAME75, or line a combustible cabinet with a GFLINER75 from our insulating liners. The rest of the range is in our built-in griddles.

What does the heavier plate actually buy me?
Stored heat. Doubling plate thickness to 6mm doubles the thermal mass, which is what keeps the surface temperature from collapsing when cold food lands on it.
If the griddle runs all service rather than in bursts, this is the plate; the 3mm OML75C3 is the faster-reacting one.
How much surface area is there?
29" by 16", roughly 464 square inches.
Burners and output?

Will it fit an opening built for another 75 Series griddle?
Yes. It uses the same 28-3/4" W x 16-3/4" D x 5-3/4" H cut-out as every other 75 Series unit.
Do I get two independent zones?
Yes. The two burners are controlled separately, so one half can run hot while the other holds.
What is the difference between this and the Pro Series version?
The Commercial Series has no lighting package and lights by push button. Burners, housing, plate construction and safety valves are unchanged.
Can it run on a propane tank?
Yes. Natural gas or propane, with the conversion orifices supplied.
Is a power connection required?
Yes, 110V. A transformer is included with the griddle.
How does it connect to the gas supply?
Through a 3/8" male flare inlet.
What if the cabinet is combustible?
Line it with a GFLINER75. That is the 75 Series insulating liner sized for this cut-out.
Will the finish hold up outdoors?
The housing is 304 stainless steel in a Texas Sea Glass matte bead-blasted finish, and Le Griddle rates the unit as weather resistant.
The bead-blasted surface also hides the scuffs a working griddle collects.
