The Primo XX-Large Griddle is the flat-top plate for the Primo Oval XX-Large, the largest grill Primo builds. It puts a solid, uninterrupted cooking surface over the fire in place of open bars, which is what small, soft and loose food needs to survive a charcoal cook.

Scale is the point on this one. People buy the XX-Large because they cook for numbers, and a griddle is the accessory that makes numbers easy: you are not turning items one at a time with tongs, you are working a surface with a spatula, sliding finished food to one edge and dropping the next round into the space it left. Breakfast for a houseful, a run of smash burgers, trays of vegetables for a party, all off a single fire.

It is a direct-heat setup. The coals go under the plate, the plate does the cooking, and how hard the surface runs is a question of how much charcoal you light and how far you open the vents.

Which Primo grill does the XX-Large Griddle fit?

The Oval XX-Large, and only that model. Primo sizes its griddles individually across the range, so an XX-Large plate is not a bigger version of the X-Large one that also happens to fit. Read the size in the title and match it to your grill before ordering.

Is a griddle worth it on a grill this big?

It is arguably the size that benefits most. The reason to own an XX-Large is cooking for a group, and cooking for a group on a bar grate means handling every item individually. A flat surface lets you cook in batches with a spatula, which is a completely different pace of work.

Do I light a full firebox for griddle cooking?

Not necessarily. Light the amount of charcoal that matches the area you actually intend to use and leave the rest unlit; a griddle does not need the whole bed going to work. Vents control how hard the surface runs, exactly as they do for any other cook on the grill.

Can I cook on the griddle with the lid closed?

You can, and it helps for anything that needs to cook through rather than just colour, such as thicker vegetables or potatoes. For eggs, burgers and anything you are actively turning, the lid stays up and you work the surface. Most griddle cooks end up doing some of each.
