This is the cast iron griddle Primo makes for the Oval XX-Large, and it works from either face. Flat on one side, grooved on the other, so a single plate covers both the griddle end of the job and the searing end of it.

On the biggest grill in the range there is usually more than one thing happening at once, and that is where a two-sided plate earns its space. Flat face up, it is where the onions, mushrooms and shrimp go while whatever needs bars cooks alongside on the grate. Grooved face up, it is where chops and thighs pick up sear lines while the fat runs clear into the channels rather than flaring underneath them.

Cast iron is slow to heat and slow to let go of heat, and both halves of that matter. Give it time to come up with the grill rather than rushing it onto a hot fire, and in exchange it will hold its temperature through batch after batch instead of fading after the first round.

Is this griddle only for the Oval XX-Large?

Yes. It is cut for the XX-Large and Primo lists separate cast iron griddles for the other Oval sizes. Because the plate has to sit properly over the fire, size is not something to approximate — buy the listing that names the grill you own.

Which face should be up for smash burgers?

The flat face. A smash burger needs the meat pressed onto continuous hot metal and cooking in its own fat, so the closed surface is the one that works. The grooved face drains that fat away and only touches the meat along the ribs, which gives you sear lines but not the crust.

How do I clean it after a fatty cook?

Scrape it down while the surface is still warm and the fat has not set, then rinse with hot water and dry it thoroughly. Wipe a light coat of oil over both faces before it goes away. Skip the soaking and skip long-term storage inside the grill.

Should the plate go on cold or hot?

Put it on early and bring it up with the grill. Cast iron heats slowly and unevenly if you rush it, so a plate set on a fire that is already roaring gets scorching underneath while the cooking face lags behind. Patience at this stage is what gives you an even surface.

Do I still need the XX-Large Griddle if I have this?

Not necessarily. This plate handles occasional flat-top cooking and adds a grooved face on top of that. The dedicated XX-Large Griddle is the one to move to if flat-top cooking for a crowd is the main way you use the grill and you want the surface area to match.
