The Primo V rack is a cradle for large single pieces of meat, and it fits four grills — the Oval X-Large, Oval Large, Oval Junior and Round. One rack, most of the range, which is not something you can say about many Primo parts.
A V shape does two useful things at once. It holds an awkward, heavy, round-bottomed piece of meat in a fixed position instead of letting it roll, which is the whole problem with roasting a turkey, a leg or a rolled joint on a flat grate. And it lifts the meat clear of what comes off it, so the underside is not sitting in a pool of fat and juice, going soft while the top browns. Air moves underneath, the surface renders and colours all the way round, and lifting the finished roast off is a matter of picking up the rack rather than wrestling the meat.

Holding a large single piece of meat steady and off the surface it would otherwise sit in. Turkeys, chickens, rolled joints and legs all want to roll on a flat grate, and all of them end up soft underneath if they cook in their own drippings. The V shape solves both problems.
Because the underside of a roast is the part that usually disappoints. Sitting in liquid, it steams rather than browns, while the top gets all the colour. Raise it and air circulates all the way round, so the skin or crust renders on every face rather than just the one pointing at the dome.
It is a good idea for anything fatty. The rack lifts the meat out of the drippings, but the drippings still have to land somewhere, and catching them keeps fat off the deflector and out of the fire. It also gives you the base for a gravy if you want one.
Either works, and they take different approaches. The V rack lays the bird on its side or back in a cradle; the ceramic chicken sitter stands it upright so fat drains down the length of it. The V rack is the more versatile of the two because it also handles roasts that are not poultry.
