Infrared works differently from an open flame. Instead of heating air that then heats the food, the burner radiates directly onto the surface, which means far less moisture is driven off during the sear. The practical result is a darker crust and a juicier interior than the same steak cooked over a conventional burner at the same nominal BTU.

The Estate Series already ships with a 12,000 BTU infrared back burner for rotisserie work; this adds dedicated infrared heat down at grate level, where the searing actually happens.
