Is one 24 inch door better than two smaller doors?

A single wide door gives you one uninterrupted opening, which is easier when you are loading bulky items into the bay. Two doors split the same face and put a seam down the middle.

Which side does it hinge on?

Your choice. The door is reversible for left or right access, so you set it up so it does not swing into the grill or a walkway.
