This is the Pro Series 75 with the heavy 6mm cooking plate — the version to buy if you cook in volume. Doubling the plate thickness doubles the thermal mass, and thermal mass is what stops the surface temperature crashing when you drop cold food onto it. Twelve burger patties at once will pull a thin plate down; a 6mm plate barely notices.

Underneath, it is the same 30-inch Le Griddle chassis: two U-shape 304 stainless burners at 18,000 BTU total, independently controlled, across a 29" x 16" surface of roughly 464 square inches. The trade is responsiveness — a 6mm plate takes longer to come up to temperature and longer to change once it is there. For batch cooking that is exactly what you want; for quick swings between settings the 3mm OML75P3 is the better tool.

Pro Series equipment carries across in full: backlit control knobs that read at a glance — red for high, yellow for low, blue for off — plus halogen work lights and an LED brand projection, push & spark ignition, a thermocouple safety valve on each burner, a Texas Sea Glass matte bead-blasted finish and a removable dishwasher-safe grease tray.

The cut-out is identical to the 3mm version — 28-3/4" wide by 16-3/4" deep by 5-3/4" high — so you can decide on plate thickness after the cabinetry is built. Natural gas or propane, 110V for the lights. Pair it with the GFFRAME75 trim kit, or a GFLINER75 from our insulating liners if the surround is combustible.
