What is IntelliBurn Technology?

It is a secondary combustion system that burns the exhaust gases a second time before they leave the fire pot. Memphis credits it with faster startups, better pellet efficiency and less maintenance on this ITC3 generation.

Practically, you refill the hopper less often for the same cook and the burn stays cleaner.

What temperature range does the Elite 39 cover?

180°F to 700°F. The top end is high enough to sear directly, and the bottom end is low enough for long smoke sessions.

How much food fits on it?

862 square inches of cooking surface as configured. Adding the optional Extended Grate Kit brings it to 1,275 square inches.

Why does the hopper have two bins?

The 24-pound hopper is split into two bins with two augers so you can load different pellet flavors and mix them for one cook. It is also the largest hopper in this Memphis lineup, so it carries long cooks without a refill.

Can I control the grill from my phone?

You can monitor it, not drive it. Memphis states that the Wi-Fi function provides monitoring, alerts and a timer but does not offer direct grill control, so temperature changes still happen at the grill.

Setup runs over Bluetooth, and the 7-inch touch screen on the unit remains the control surface.

Is the Elite 39 stainless steel throughout?

It is built from heavy-duty 304 stainless steel in a double-walled, sealed construction. 304 is the more corrosion-resistant grade of the two Memphis uses, and an oven-grade gasket seals the lid.

The Elevate 30 built-in uses 430 stainless instead, which is the main material difference between the two lines.

What is on the control panel?

A 7-inch touch screen placed for use while standing at the grill. Interior lighting and a pre-programmed cleaning routine are built in as well.

What accessories are included and what costs extra?

The Direct Flame Insert, the Genie Tool and one meat probe are included. The Extended Grate Kit and the Deluxe Vinyl Cover are sold separately.

What is the difference between direct and indirect flame modes?

Indirect mode keeps the fire shielded so the grill runs as a convection oven; direct mode opens the flame to the grate for searing. The included Direct Flame Insert is the part that switches it over.

Should I get the built-in or the cart version?

Take the built-in if the grill is going into an island opening you can frame to 42-5/8 by 16-3/4 by 24-1/2 inches. If it is not, the Elite 39 freestanding cart has the same 862 square inch surface and 24-pound dual-bin hopper on a rolling base.
