The Primo Junior Griddle is a solid cooking surface made for the Primo Oval Junior. Where the standard grate is bars with open space between them, this is one continuous plate, so eggs, chopped onions, shrimp and thin fillets stay on the grill instead of dropping into the coals.

A flat top also changes what happens to the food. Fat and juices stay underneath it and cook off around the edges rather than falling away, and that puddle of rendered fat is where the crust on a smash burger and the browned corners of a pile of hash come from. Nothing about it is subtle: press meat onto a hot solid surface and you get colour across the whole underside instead of stripes.

The Junior has the smallest cooking bed in the Oval line, which is a good argument for a griddle rather than against one. Every square inch of a solid plate is usable, so you lose nothing to the gaps, and small-batch cooking for one or two people is exactly what this size is built around.

Will the Primo Junior Griddle fit my Oval Junior?

Yes. It is made for the Oval Junior and that is the size to buy it for. Primo griddles are cut to the grill they belong to, so a plate meant for a bigger Oval will not sit where it should on a Junior. Match the size word on the listing to the grill you own.

What can I cook on a griddle that I cannot cook on the grate?

Anything small, soft or loose. Scrambled and fried eggs, pancakes, sliced peppers and onions, mushrooms, shrimp, scallops, thin white fish, diced potatoes, chopped bacon. All of it either falls through a bar grate or sticks to it and tears, and all of it behaves on a flat plate.

Does the griddle replace the cooking grate while it is in use?

It takes over the cooking space above the fire, so treat a griddle session and a grate session as two stages rather than one. Cook whatever needs the flat surface first, lift the griddle off with gloves, and the grill goes back to normal grilling with the same fire underneath.

How is this different from the Primo cast iron griddle for the Oval Junior?

The cast iron version is a smaller-outlay plate with a flat face on one side and a grooved face on the other, so you can flip it for sear marks. This listing is the Junior Griddle itself. Both give you a solid surface; the cast iron one gives you a choice of two.

Do I need a heat deflector to use it?

No. Griddling is a direct-heat job and the plate itself is the barrier between the fire and the food, so the coals go straight underneath. A deflector is for low, indirect cooking, which is a different setup entirely and not what a flat top is for.

How do I clean it after a greasy cook?

Scrape it while it is still warm, when the fat has not set. A metal scraper and hot water take off almost everything, and a thin wipe of cooking oil afterwards keeps the surface from going dull between cooks. Do not leave it wet and do not leave food residue sitting on it.
