Why does the side burner need covering at all?

Its control knobs and burner heads sit exposed, and rain and grit are what ruin them first. A cover that stops at the edge of the grill leaves exactly those parts open, which is the reason this version is cut wider.

Will the vinyl handle rain and pollen?

That is what it is for. The material is water-resistant high-density canvas vinyl that sheds rain, pollen, dust, and dirt, with an embroidered Alfresco logo on the front.

Will condensation build up under it?

Ventilation prevents that. Damp air escapes through the cover instead of being held against the stainless steel below it.

On this range, C means the cover is cut for a cart rather than a built-in, and SB means it also spans a side burner. Can I use the CSB cover on a cart without a side burner?

It will fit over it, but loosely. A loose cover flaps in wind, chafes the finish, and lets weather blow underneath, so the correctly sized cover is worth getting right.
