A pizza oven is a worse candidate for going uncovered than a grill is. The ceramic hearth and ceiling slabs sit inside a chamber that is open at the front, so wind-driven rain and debris get in through the door opening rather than just sitting on a lid. Covering it between cooks keeps the hearth dry, which matters the next time you run it to 1,000°F.
