Primo's cast iron griddle for the Oval Large is a two-faced plate: flat on one side, grooved on the other. That is stated on the product itself and it is the whole reason to own one, because it covers two jobs that normally take two separate accessories.
Turn the flat face up when the cook needs a solid surface. Chopped vegetables, shrimp, sliced onions, eggs, ground beef pressed thin, anything that a bar grate would drop into the fire or tear apart on the way off it. Turn the grooved face up when you want char lines and want the fat gone: the food sits on the ribs, the drippings run into the channels, and the contact points get hot enough to mark.
The material matters as much as the shape. Cast iron takes a while to come up to temperature, which means preheating it with the grill rather than dropping it onto a hot fire, but once it is there it stays there. That stability is what gives you consistent colour across a whole batch instead of a good first round and a disappointing second one.
Sized for the Primo Oval Large ceramic charcoal grill. Alongside it, the Primo Large Griddle is the full flat-top option, the cast iron searing grate for the Oval Large is dedicated to searing, and the Primo Extension Rack for Oval Large adds a tier of space above the main grate.
Frequently Asked Questions
Yes. This listing is the Oval Large cast iron griddle and it is cut for that grill. Primo sells a matching plate for the other Oval sizes, so if you also run a Junior or an X-Large you need the version named for each. The size in the title is the fit.
The flat side. Smash burgers work because the meat is pressed into direct contact with hot metal and cooks in its own rendered fat, and both of those need a closed surface. On the grooved side the fat drains away and the contact is only along the ribs, which is the opposite of what a smash burger needs.
Two things. They raise the food onto ribs so the contact points get concentrated heat and mark the surface, and they give the rendered fat somewhere to go instead of sitting under the meat. It is the closest thing to grate cooking you can get on a solid plate.
Put it on while the grill is coming up and let both heat together. Cast iron takes longer to reach temperature than the air around it, so a plate dropped onto an already hot fire will have a scorching underside and a cool cooking face. Give it time and the surface is even.
The searing grate is bars only, built to do one job as well as possible. This plate does two jobs adequately and gives you a genuine flat surface as well, which the searing grate cannot. If you want a griddle surface at all, the choice is between this and the full-size Large Griddle.
