Primo's cast iron griddle for the Oval X-Large arrives with two cooking faces already built in: a flat side and a grooved side. You decide which you need at the moment you set it on the grill, and you can change your mind halfway through a cook by lifting it with gloves and flipping it over.
Flat side, it is a griddle. That gives the X-Large a closed surface for eggs, mushrooms, diced potatoes, shrimp and burgers, none of which behave well on open bars. Grooved side, it is a searing surface: raised ribs concentrate heat into lines across the food and the channels between them carry rendered fat away, so the meat marks rather than sits and simmers.
Cast iron is chosen for this kind of tool for a reason you can feel. Put a cold steak on a thin metal surface and the surface temperature falls immediately; put the same steak on cast iron and it barely moves, because the material is holding far more heat than the meat can pull out of it in the first few seconds. Browning happens in those seconds.

The Oval X-Large. Primo cuts a separate cast iron griddle for each Oval size and this one is the X-Large plate, so it is not a general-purpose part that will also work on a Large or a Junior. Match the size named in the title to the grill in your yard.
The flat side gives you a closed griddle surface, holding small and soft food and keeping fat under it. The grooved side lifts the food onto ribs, marks it along the contact lines and drains the fat into the channels. One plate, two setups, chosen by which way up you put it down.
Not on the same level, because both need the cooking space directly over the fire. In practice you pick one for the cook, or run them in sequence: sear on the cast iron searing grate while the fire is at its hottest, then swap in the griddle for the vegetables.
The X-Large Griddle is the dedicated flat-top made for that grill and it is the serious option if griddle cooking is a regular habit. This cast iron plate is the smaller-outlay way in, and it adds the grooved face, which the flat-top does not have. They answer different budgets and different frequencies of use.
Scrape it while it is still warm and rinse with hot water, then dry it fully and wipe a thin film of oil across both faces. What you want to avoid is soaking it, leaving it wet, or storing it inside the grill where ash draws moisture against the surface.
