The Primo Oval XX-Large Rotisserie Kit is the rotisserie for the Primo Oval XX-Large, the biggest grill Primo builds in the Oval range. It is made for that size and mounts nowhere else.

An XX-Large tends to be bought for feeding people in numbers, and spit roasting suits that job well. A single large load cooking unattended over a settled fire needs far less minding than the same amount of food spread across a grate and turned in shifts, and the technique holds up over a long cook because the fat rendering out keeps returning to the surface instead of being lost to the coals. Give the fire time to settle before the load goes on; a big charcoal bed that is still coming up will keep climbing long after you stop wanting it to.

Long cooks reward preparation. Truss the load properly, balance it around the spit, position the coals to one side and set a pan beneath the meat before you start, because none of it is a job you want to be doing with a hot grill open in front of you.

Built for the Primo Oval XX-Large ceramic charcoal grill. Use the Primo oval rotisserie basket and the Primo kebab holder for everything that is not a joint of meat, set a Primo half drip pan for the Oval XX-Large below, and burn Primo natural lump charcoal under it.

Frequently Asked Questions

Which grill does this rotisserie kit fit?

The Primo Oval XX-Large, and that size only. It is the largest of the five rotisserie kits Primo lists, one per grill, and the mountings are not shared between sizes. Anyone cooking on an X-Large or a Large needs the kit listed under their own size.

Is a rotisserie the right choice for cooking for a crowd?

Often, yes. One large load turning over a steady fire needs much less attention than a grate covered in individual pieces that all want turning at different times, and it holds moisture well over a long cook. It also frees you up, which matters when you are hosting.

What should I watch on a long spit cook?

The fire, mostly. Set the vents once the bed has settled and then make small adjustments with time to see their effect rather than chasing the temperature. Beyond that, check early on that the load is still turning cleanly, since meat loosens as it cooks and trussing can slacken.

Do the baskets and kebab holder work with this kit?

Yes. None of the three rotisserie accessories carries a grill size, because they mount on the rotisserie rather than in the firebox. Once you have the kit for your grill, the 3-sided basket, oval basket and kebab holder all become options.

How much charcoal should I light for a rotisserie cook?

Enough for the length of the cook, banked to one side, and lit early enough to settle before the food goes on. A large firebox is forgiving once it is stable, since a brief lid opening barely moves it, but an overbuilt fire in a big grill takes a long time to bring back down.

Do I really need a drip pan underneath?

It solves two problems at once. Fat reaching live coals flares and puts harsh smoke onto the food, and on a cook this size there is a great deal of fat in play. A pan catches the lot, protects the flavour and turns cleanup afterwards into a short job.
