The Primo 9-slot rib rack is made for the Oval X-Large and it exists for one situation: the day you are cooking ribs for a lot of people. Laid flat, racks of ribs eat a grate quickly. Stood on edge in slots, they take up a fraction of the space and you fit several times as many over the same fire.

Standing them up does more than save room. Vertical ribs are surrounded by moving air rather than sitting with one face pressed against metal, so smoke reaches both sides and the bottom does not cook faster than the top. You also stop juggling: nothing needs turning, nothing sticks to the grate, and the whole load comes off in the order it went in. Of the two rib racks Primo lists, this is the larger, and it is sold for the X-Large alone — the one to buy when the grill is an X-Large and the ambition is a full load.

Made for the Primo Oval X-Large ceramic charcoal grill. Ribs want indirect heat, so pair it with the Primo heat deflector plates for the Oval X-Large and a half drip pan underneath. If you want more grate as well as denser ribs, the Primo Extension Rack for Oval X-Large adds a second tier. Browse Primo grill accessories for the rest.

Frequently Asked Questions

Will the 9-slot rib rack fit anything other than the Oval X-Large?

No. This one is listed for the Oval X-Large alone, and that is a deliberate difference from the rest of the range. If you own a Large, a Junior or a Round, the 5-slot rib rack is the version that covers those grills.

Why stand ribs up instead of laying them flat?

Space and airflow. A rack of ribs laid flat takes a large share of the grate, while the same rack on edge takes a narrow slice of it. Standing them also puts moving air and smoke on both faces, so nothing is pressed against hot metal and nothing needs turning part-way through.

Do I have to fill all nine slots?

No. Cook two racks in it or cook nine; the empty slots simply go unused. What the extra capacity buys you is the option, which is why people who cook for crowds go for this one rather than the smaller rack.

What else do I need for a rib cook?

Indirect heat, which on a Primo means deflector plates between the coals and the food, and something underneath to catch fat. Ribs cook long and low, so the fire needs to be shielded rather than roaring directly under the meat.

Can it hold anything besides ribs?

A slotted rack will take other flat items that stand on edge, and plenty of people use one for that. Ribs are what it is designed around, though, so the slot spacing is set with them in mind rather than as a general-purpose holder.
