What do the two burners actually put out?

Each Bow Tie burner is rated at 18,000 BTUs, for 36,000 BTUs total. Running one side alone gives you a genuine indirect zone instead of a slightly cooler half of a single manifold.

How much food fits on it?

Up to 540 square inches of cooking space. Multi-level cooking grids and the Retract-A-Rack system are both included, so you have more than one height to work with when the main surface fills up.

Do I have to build this into an island?

No — it is a freestanding cart, so it rolls to wherever you want to cook and needs no masonry work at all. If a permanent island is what you are planning instead, the 26" built-in head uses the same 36,000 BTU two-burner setup.

What fuel does it run on?

Natural gas. Check that you have a gas line reaching the spot where you intend to park the cart, since a cart on natural gas is only as portable as its hose run.

What is the cart made of?

304 stainless steel through the body, with stainless burners inside. That is the grade specified for the construction, not a plated or painted finish.

Is there prep space and storage?

Side shelves give you landing room on both sides of the lid, and the cart base has soft-close doors for storing tools and covers. The doors close under control rather than banging shut against a stainless frame.

How does it deal with flare-ups?

A flare control vaporizer sits between the burners and the grids to burn off drippings before they pool. Heat zone dividers work alongside it so a grease fire on one side does not take over the whole cooking surface.

Can I cook on it at night?

Yes. Interior cooking lights illuminate the grids and the control knobs are lit as well, so you can read burner positions in the dark.

How do the burners ignite?

Flame Thrower ignition lights them from the knobs. There is no separate ignition button to press while you hold a knob down.

What happens to the grease?

Drippings collect in a drip tray on an easy slide system, so you pull it out from the front of the cart to empty it. Emptying it does not require reaching under the firebox.

How is the lid built?
