What island cutout does each jacket need?
Frame the island to the jacket, not the grill. The SUNJK33 needs 31-1/2" wide by 24-1/4" deep by 13" high, the SUNJK40 needs 38-3/4" wide and the SUNJK45 needs 43-1/2" wide, both at the same 24-1/4" depth and 13" height.
Overall jacket sizes are 33-1/4", 40-1/4" and 45-1/4" wide, each 25-3/4" deep and 14-1/4" high.

Sunstone's Ruby Series manual asks for 24" of clearance from combustible materials in any direction of the grill. If any combustible material is within that 24", the manual calls for a heat barrier such as a grill jacket, or non-combustible material such as brick, cement board or metal.
The manual also says the 24" clearance under the countertop to combustible construction can be modified by use of an insulated jacket. Check your local code before you finalize the island, and read do you need an insulating grill liner? for more.
The Sunstone SUNJK insulated jacket is the heat barrier Sunstone pairs with its current Ruby built-in grills. Sunstone offers it in three widths, each matched to specific grills: the 33" SUNJK33 for the Ruby 30" RUBY3B, the 40" SUNJK40 for the Ruby 36" RUBY4B and RUBY4BIR, and the 45" SUNJK45 for the Ruby 42" RUBY5BIR and Emerald 42" EMCHDZ42. The grill drops into the jacket's sleeve and rests on its top edge, and the jacket sits in a larger island opening than the grill would need on its own, so plan the cutout around the jacket before the island is framed.

Installation Note
The jacket changes the hole you cut in the island. A Ruby 36" RUBY4B on its own needs a 33-1/2" x 22" x 10" cutout; with the SUNJK40 the island opening becomes 38-3/4" x 24-1/4" x 13", and the grill drops into the jacket's 34" x 22" sleeve. Frame to the jacket cutout in the table above, not to the grill's cutout.
