Alfresco 30" Countertop Gas Pizza Oven AXE-PZA

This is the countertop version of Alfresco's Pizza Oven Plus. A fireplace-style gas log drives heat up into a 3/4" ceramic ceiling slab while a ceramic infrared hearth burner keeps the floor hot, so the top and the underside of a pizza cook at the same rate. It preheats in 15 minutes, runs past 1,000°F, and turns out a true Neapolitan pizza in about three minutes.

The difference between this and a covered grill with a stone in it is stored heat. A 3/4" ceramic slab holds enough energy to keep cooking hard the moment a cold, wet pizza lands on it — which is exactly when a grill stone gives up.

Where it can actually sit

Alfresco's spec sheet gives countertop requirements of 30" x 24" with the gas and electrical connections coming up from underneath, a 3/8" raised lip sealed to the countertop to keep water out, and 1" minimum clearance all around the base for intake air. Surrounding wall construction must be non-combustible.

We have not published an overall height or a clearance-to-combustibles figure. The height callout on Alfresco's drawing does not read cleanly, and Alfresco puts the clearance figures in the oven manual rather than on the sheet — and this is an appliance that runs above 1,000°F. Call 843-212-7209 and we will confirm both against the current documents before you build anything around it.

Countertop AXE-PZA or built-in AXE-PZA-BI?

Same oven, same 456 sq. in., same ceramic hearth. The question is how it is installed.

The AXE-PZA on this page sits on a counter or a cart. It is the right choice if you want the oven to move, or if you are adding pizza to a patio rather than building a masonry kitchen around it.

The AXE-PZA-BI built-in is designed to drop into an outdoor kitchen island with rear exhaust at counter level. Choose it when the island is being built and the oven is part of the design.

Which cart, if any?

The oven ships as an oven. Cart options are separate.

The AXE-PZA-CART-01 pizza oven cart is the straightforward rolling base: retaining stops that locate the oven's feet, 4" casters with brakes on one side, and room underneath for a 20 lb. LP tank.

The AXE-PZA-PPC deluxe prep cart is a full outdoor pizza station — insulated ice drawer, condiment well with bowls and pans, removable cutting board, plate shelf, storage and a folding side table. It costs considerably more and takes far more room, and it makes sense when the oven is how you entertain rather than an occasional weeknight thing.

Fuel and utilities

Order the variant that matches your supply. Natural gas is AXE-PZA-NG and connects with a 1/2" NPT fitting at 5" W.C.; propane is AXE-PZA-LP with a 3/8" ODF connection at 10" W.C. They are not field-convertible.

Electrically it is undemanding — 115 VAC at 0.3 A through a standard 8 ft. cord and NEMA 5-15 plug — but it does need an outlet, so a propane oven on a cart still needs power nearby. Our natural gas and propane grills FAQs cover choosing between the two.

How hot does the Alfresco AXE-PZA get?

Over 1,000°F.

That is the temperature range a true Neapolitan pizza needs, and it is what separates a dedicated pizza oven from a covered grill with a stone in it.

How long does the AXE-PZA take to preheat?

15 minutes, and it cooks a Neapolitan pizza in about three minutes after that.

The fireplace-style gas log absorbs and radiates heat up into the ceramic ceiling slab, which is what makes a preheat that short possible on a chamber this size.

How much cooking space is inside?

456 sq. in., behind a full 8.5" high opening.

Measure your peel and any cast iron against that opening height before you plan around it.

What is the total BTU input?

35,600 BTUH, from a tube-log burner and a ceramic infrared hearth burner working together.

We have not published a per-burner split because Alfresco's own documents do not agree on one. The total is from the AXE-PZA spec sheet.

What is the hearth made of?

A 3/4" thick ceramic slab, and the ceiling is the same material and thickness.

Stored heat in that slab is what keeps the oven cooking hard the moment a cold, wet pizza lands on it.

What counter does the AXE-PZA need?

Alfresco's sheet gives countertop requirements of 30" x 24" with the gas and electrical connections coming up from underneath.

Installation, not cooking. Both are the Pizza Oven Plus with the same 456 sq. in. ceramic hearth.

The AXE-PZA sits on a counter or a cart. The AXE-PZA-BI is built into an outdoor kitchen island with rear exhaust at counter level. Choose the built-in if the island is being constructed around it.

Does the AXE-PZA come with a cart?

No. The oven ships as an oven; carts are sold separately.

The AXE-PZA-CART-01 is the rolling base with LP tank storage. The AXE-PZA-PPC is the full prep station with an ice drawer and condiment well.

Does it have glass doors?

Yes, stainless steel-framed glass doors, with a halogen oven light behind them so you can watch a pizza without opening the oven.

The doors and hinges are removable, so you can run the oven open for high-heat pizza work or closed for baking and roasting.

My older Alfresco pizza oven has solid doors. Can I add glass?

Yes, if it is a pre-2017 AXE-PZA. That is what the AXE-PZA-GD KIT glass door conversion kit is for.

Current ovens already have glass doors fitted, so the kit is only for older units. Call 843-212-7209 with your serial number if you are unsure.

Can I cook things other than pizza in it?

Yes. Alfresco builds it to bake, roast and iron-skillet sear as well as run pizzas.

Run it with the doors off for high-heat pizza, or closed for breads, roasted vegetables and proteins.

Does the AXE-PZA need electricity?

Yes, but very little: 115 VAC at 0.3 amps, 60 Hz, through an 8 ft. cord with a standard NEMA 5-15 plug.

Worth remembering if the oven is going on a cart with a propane tank — it still needs an outlet within reach.

Is the AXE-PZA available in propane?

Yes. Propane is AXE-PZA-LP with a 3/8" ODF connection at 10" W.C.; natural gas is AXE-PZA-NG with a 1/2" NPT connection at 5" W.C.

What do I need to load and turn pizzas?

A long peel. The Alfresco 32.5" metal pizza peel reaches the back of the hearth through the 8.5" opening without putting your hands in the oven.

Which cover fits the AXE-PZA?

The AGV-PZA vinyl cover, or the AGV-PZA-PREM premium cover.

Covering matters more on a pizza oven than a grill, because the chamber is open at the front and wind-driven rain gets in through the door opening.
