Le Griddle is the deepest built-in griddle range we carry, and the two decisions that actually matter are plate thickness and fuel. A 3mm plate reacts fast to a knob change; a 6mm plate holds temperature when you load it. Gas gives you a bigger surface and no electrical load on the cooking side; electric gives you a griddle you can put where no gas line runs. If you only want one 30-inch flat top and you do not want to think about it, the TrueFlame TFG30 at $2,399 and the Coyote C3FTG30 at $2,399 are the two to compare first.

Le Griddle's naming looks arbitrary until you know that the number is the cooking-surface width in centimetres, not inches. That is why the inch sizes come out irregular: 40 cm is about 16 inches, 75 cm is about 30 inches, 105 cm is about 41 inches. Once you see that, the rest of the system is straightforward.
So an OML75P6 is a Pro Series, 75 cm (30-inch), 6mm-plate griddle. An OML105C3 is a Commercial Series, 105 cm (41-inch), 3mm-plate griddle. The Pro Series carries the lighting package — backlit knobs and interior lights — and the Commercial Series does not. Le Griddle products have been made in the USA, in Texas, since 2023; a "made in France" claim you may see repeated on older listings elsewhere is no longer accurate.
All figures come from the product title or the spec fields on that product's own page. Cooking-area figures are the manufacturer's own surface measurements and are not directly comparable across brands, so treat them as a size guide rather than a league table.

A fourth gas option sits in the same range: the Bonfire Whistler built-in gas griddle CBBGD at $2,789, a two-burner natural gas unit. Its published surface and cut-out figures are not in our spec fields, so confirm the spec sheet before framing an opening for it.
Plate thickness is not a quality tier. It is a behaviour choice, and the two plates suit genuinely different cooks.
The 3mm plate reacts. It reaches temperature faster and it responds when you turn a knob down. That matters if you cook eggs and pancakes at breakfast, then want the same surface hot for lunch an hour later, or if you regularly switch a zone between searing and holding within one session.
The 6mm plate stores. Doubling the thickness roughly doubles the thermal mass, and mass is what stops the surface temperature collapsing when a tray of cold smash-burger patties lands on it. If you cook in volume — a full plate at a time, service after service — the 6mm is the right tool. The price of that stability is patience: it takes longer to come up to heat and longer to change once it is there.
Two practical consequences. First, the 3mm versions carry a slightly larger stated cooking area at both sizes (477 vs 464 sq in at 75; 666 vs 650 sq in at 105), because the thicker plate takes up a little room. Second, and more usefully: the 3mm and 6mm versions of the same model share an identical cut-out, so you can frame the island before you have made the decision. Build to 28.75" × 16.75" × 5.75" for any 75-series unit and to 40.5" × 16.75" × 5.75" for any 105.
Choose gas if the surface is the main event. Gas gets you the bigger sizes, three independently controlled zones on the 105 units, and a griddle that keeps working when the power is out. It also means a gas line, a gas fitting and a permit conversation with your installer. The Pro Series units carry a lighting package that itself needs a power supply, so "gas" does not always mean "no electrician".
Choose electric if the griddle is a second appliance or the location has no gas. The Wee GEE40 at $2,134 is the one to look at for a bar top, a covered porch, or an island where the gas budget has already gone to the grill; it is rated for built-in or countertop use, so it is also the only unit here you can move. The Ranch Hand GEE75 at $3,184 gives you two independently controlled 1800W zones and 463 sq in in the same 28.75-inch cut-out the gas 75-series units use — which means an island framed for a Ranch Hand can later take a gas Pro Series 75 without masonry work. Electrical supply, circuit sizing and outdoor rating are for a licensed electrician working to the installation manual and local code; we will not guess at your circuit.
Best all-round 30-inch gas griddle: the Le Griddle Commercial 75 OML75C3 at $3,199. It has the same burners, plate construction, 304 stainless housing and cut-out as the Pro Series 75, and drops only the lighting package. If you are not cooking after dark, that is $199 saved against the Pro Series 3mm and a simpler appliance.
Best 30-inch griddle under $2,500: the TrueFlame TFG30 at $2,399. It publishes the highest output of the 30-inch gas units here at 36,000 BTU across two burners, with 495 sq in of 304 stainless surface. Note the deep cut-out — 21.875 inches — which is the deepest griddle opening on this page and worth checking against your island framing before anything else.
Best griddle for heavy batch cooking: the Le Griddle Pro Series 105 OML105P6 at $5,098. Three zones, 27,000 BTU and 650 sq in on a 6mm plate is the specification for cooking continuously rather than in bursts, and the backlit knobs earn their keep on a surface this wide.
Best small-space griddle: the Le Griddle Pro Series 40 OML40P3 at $2,198. A 14.75-inch cut-out is small enough to squeeze in beside a grill without giving up a whole cabinet bay.
Best value in the Coyote line: the Coyote C3FTG30 at $2,399. Its cold-rolled steel surface is the traditional griddle material — it seasons like a cast pan and needs that seasoning maintained, which is a different ownership proposition from the stainless plates elsewhere on this page. It also has the narrowest 30-inch cut-out here at 27.25 inches.
An insulating liner is required where the surround is combustible — a wood-framed island, for example — and generally is not where the surround is masonry. Defer to the manufacturer's installation manual, local code and a licensed professional rather than to a rule of thumb. A griddle produces a lot of grease-laden vapour, and any covered or partially enclosed structure changes what the installation needs. There is no single CFM rule we will quote you; ventilation requirements come from the manufacturer's installation manual, local code and a licensed professional. Almost certainly not. Griddle cut-outs are shallower in height and quite different in depth — 5.75 inches high on the Le Griddle units against 8 to 11 inches on most grill heads. Check the cut-out dimensions guide and, for a retrofit, the replacement cut-out finder.

Only if you cook in volume. For a family breakfast griddle, the 3mm is the better appliance and the cheaper one.
Buy the Le Griddle Commercial 75 OML75C3 at $3,199 if you want the best 30-inch gas griddle without paying for lights. Buy the TrueFlame TFG30 at $2,399 if your budget stops at $2,500 and your island can take a 21.875-inch-deep opening. Buy the Le Griddle Ranch Hand GEE75 at $3,184 if there is no gas line and no realistic way to run one — it keeps the same cut-out as the gas 75 units, so the decision is reversible later. Step up to a 6mm plate only if you cook a full surface at a time; otherwise the 3mm is the more useful griddle.
